One cup of cocoa spread, a loaf tin, and brownies with no butter and no dairy.
The brownie was born in Chicago at the end of the nineteenth century, when a chocolate dessert was wanted that would pack neatly into a box. It came out of the oven low, dense and unrisen, and stayed that way.
A classic brownie is built on butter, melted chocolate and a lot of patience. Here everything starts and ends with one cup of our cocoa spread, made from almonds, macadamia nuts, organic cocoa and coconut sugar. It brings the fat, the chocolate and the sweetness all at once, so there is no need for butter, dairy or hydrogenated oils.
The boiling water is the small secret. It melts the spread and the coconut oil into a smooth mixture, and it also opens up the cocoa and deepens the flavour. A combination of wholegrain spelt flour, almond flour and cornflour gives the right texture, moist inside with a thin crust on top.
The three spoonfuls we keep aside are the glaze. Spread them over the warm brownies and they melt into a glossy layer that sets as it cools. A few chopped almonds on top, and that is it.
